Cut the tomatoes into 1 cm (0.4 in.) cubes. Remove sinew from the chicken tenders and diagonally slice up.

Place the tomatoes (1) into a pot, cover with a lid and simmer for 2 minutes over low heat. Add in the chicken tenders and red chili pepper. Cover with the lid and simmer for an additional 2 minutes.

Pour in the chicken stock, turn the heat to medium, remove any scum that forms on the surface and adjust the flavor with (A).

At the same time, boil the udon noodles, drain and place into bowls. Add in (3) and garnish with the cilantro or perilla leaves.
