Directions

  1. Cut the tomatoes into 1 cm (0.4 in.) cubes. Remove sinew from the chicken tenders and slice up diagonally.
  2. Place the tomatoes into a pot, cover with a lid and simmer for 2 minutes over low heat. Add in the chicken tenders and red chili pepper. Cover with the lid and simmer for an additional 2 minutes.
  3. Pour in the chicken stock, turn the heat to medium, remove any scum that forms and adjust the flavor with (A).
  4. At the same time, boil the udon, drain and place into bowls. Pour on (3) and garnish with the cilantro or perilla.
