Thinly slice up the onion, keeping each slice width slightly thick. Chop the pork into bite-size pieces.

Bring the dashi to a boil, add in the soy sauce, mirin and (1), then simmer for 5 minutes.

Boil the udon noodles in hot water, drain and place into a colander.
