Cut each chicken tender into half of its thickness, slice open (butterfly) lengthwise to open up and remove any sinew.

Soak (1) in (A) for about 5 minutes.

Pat away excess liquid, spread mustard into the sliced open side, close and then lightly cover completely with flour.

Heat about 2 cm (0.8 in.) of oil in a fry pan, pan-fry (3) while turning over until golden brown.

Cut into easy to eat pieces, serve on top of lettuce-lined plates and garnish with the radishes and thinly sliced lemon.
