  1. Diagonally slice the chicken and cut the bamboo shoots into large bite-size pieces. Season both with (A).
  2. Mix together (B).
  3. Coat (1) with (2) and deep-fry in oil heated to 180 C (356 F). Serve onto plates, and garnish with sage or other herbs if on hand.

Cooking Basics

Chicken breast - slicing into thin diagonal cuts / sogi-giri

Lay the knife down almost flat to make thin slices. By doing so, larger slices will cook faster and flavors will be soaked up more easily.
