Stuffed Shiitake Mushrooms in Ankake Sauce

(A) Meat filling

200 g (7.1 oz.)

(B) Starch solution

Directions

  1. Wipe off the shiitake mushrooms with a well wrung cloth, remove the stems and lightly cover in flour.
  2. Mix together (A) to prepare the meat filling. Divide into 12 equal portions, pile one each onto a shiitake mushroom and adjust the shape.
  3. Arrange (3) into a lidded heat-safe container and cook in a microwave (500 W) for 5 minutes.
  4. Warm up the chicken stock in a pot, then add in the starch solution (B) to thicken and prepare the ankake sauce.
  5. Place (3) onto a dish, use a circular motion to pour on (4) and sprinkle on the green onions to complete this dish.

Shiitake mushrooms - removing the stem

The stem can be easily removed by folding it over and pulling it off at the base, where it is attached to the cap. You can also cut it off from under the cap with a knife.
