- Remove the seeds and pulp from the kabocha squash, then peel and cut into bite-sized pieces and arrange in a heat-safe dish. Cover lightly with plastic wrap or an unsealed lid and microwave (600 W) for 3 to 4 minutes. Once softened, mash with a fork, add the butter, milk and salt, and mix until smooth. Mince the onion. Mix together (A).
- Heat the oil in a fry pan over medium heat, saute the onions, once translucent add the ground pork and cook together. Once the meat is cooked through, add in (A) and simmer until the cooking liquids are boiled down. Adjust the flavor with the black pepper.
- Spread the meat sauce inside of a heat-safe dish, spread a layer of the kabocha squash on top, then sprinkle on the shredded cheese. Cook in a toaster oven for about 5 minutes until the surface is golden brown. Sprinkle on the parsley if desired.

Cut the onion with its outer skin removed vertically in half, and thinly slice cut-side down without cutting as far as the base. Then lay the knife flat and insert horizontal cuts, finely chopping from end to end.
