New Year's Kuromame (Sweet Black Beans)

dried black beans

150 g (5.3 oz.)

(A) 

warm water (below 50 C/ 122 F)

1 L (35.2 fl. oz.) 

sugar  

110 g (3.9 oz.)

salt

1/2 tsp

baking soda

1/4 tsp

Directions

  1. Rinse the beans in a pot and then drain well. Add in (A), then leave to soak overnight (about 8 hours).
  2. Place (1) over high heat, remove any scum that forms once boiling, then slowly simmer over low heat. Simmer for about 2 hours while adding hot water throughout to keep the beans submerged. 
  3. Turn off the heat once softened, and without draining, allow the beans to be infused with flavor overnight before serving.
