What is ohitsu?
Ohitsu/Japanese rice bucket (おひつ in Japanese) is a type of container for keeping cooked rice. Originally, ohitsu were made of wood, and in the days before rice cookers, they were made to take advantage of the properties of wood, which absorb excess moisture from the rice and add moisture when it dries. Recently, ceramic and plastic ones have also become available.

How to use
Wipe the inside of the ohitsu with a wet cloth just before putting the rice in. This will prevent the rice from sticking too much. Once cooked, put the rice in. Do not pack the ohitsu too much or press it with a rice scoop. Its properties are further elevated if a cloth is put between the ohitsu body and the lid. Wash and dry after each use.
Substitute for ohitsu: when you don’t have it
Clay pots can be used in the same way as ceramic ohitsu. Rice can also be put in a heat-resistant bowl and covered with a cloth and plastic wrap.
Trivia
One of the joys of using a wooden rice container is that the aroma of the wood is transferred to the rice, but if you don't like the smell of wood, it's a good idea to soak it to remove the bitterness before using your ohitsu. Fill it with rice water and leave it for about three hours, then rinse and hang it out to dry in the shade. This will soften the wood's aroma.
