Hashi-yasume, directly translated as rest-your-chopsticks, is a palate-cleansing dish that may be served between main dishes.

Cut the turnip into 5 mm (1/4 in) thick triangular pieces. Chop the turnip leaves into small pieces.

Mix some salt into (1) by hand. Once softened, squeeze extra-moisture from the leaves.

Remove the pit from the umeboshi (pickled Japanese apricot), break apart into small pieces by hand.
