  • Hashi-yasume, directly translated as rest-your-chopsticks, is a palate-cleansing dish that may be served between main dishes.

Directions

  1. Cut the turnip into 5 mm (1/4 in) thick triangular pieces. Chop the turnip leaves into small pieces.
  2. Mix some salt into (1) by hand. Once softened, squeeze extra-moisture from the leaves.
  3. Remove the pit from the umeboshi (pickled Japanese apricot), break apart into small pieces by hand.
  4. Place (2) and (3) into a bowl and dress with (A).
