Divide the water spinach into stem and leaves. Cut the stem into 3-4 cm (1.5 in) lengths, and the leaves into large, bite-size pieces.

Chop up the chicken breast into chunks and soak in (A) to season.

Soak the mushrooms into water, remove and cut off the hard stem. Chop into bite-size pieces.

Beat the eggs and lightly season with salt and pepper.

Heat 1 tsp of sesame seed oil in a fry pan, pour in the egg, fry and place on a plate and set aside for later.

Pour in the remaining sesame oil. Fry the stems from (1) and the chicken breast.

Add in (3) and the spinach leaves and lightly stir fry.

Pour in (B), add in the eggs again and lightly stir together before serving.
