Directions
- Divide the water spinach into stem and leaves. Cut the stem into 3-4 cm (1.5 in) lengths, and the leaves into large, bite-size pieces.
- Chop up the chicken breast into chunks and soak in (A) to season.
- Soak the mushrooms into water, remove and cut off the hard stem. Chop into bite-size pieces.
- Beat the eggs and lightly season with salt and pepper.
- Heat 1 tsp of sesame seed oil in a fry pan, pour in the egg, fry and place on a plate and set aside for later.
- Pour in the remaining sesame oil. Fry the stems from (1) and the chicken breast.
- Add in (3) and the spinach leaves and lightly stir fry.
- Pour in (B), add in the eggs again and lightly stir together before serving.
