Season the marlin with salt and pepper, spread the mustard thinly on top, cover with (1) and lightly compress. Bake in an oven for 12 to 13 minutes at 200 C (392 F).

Prepare the tomato sauce by sauteing the garlic and onions in the olive oil from (B). Add in the diced tomatoes, simmer for 8 to 9 minutes, then adjust the flavor with salt and pepper.

Scoop (3) into dishes, place (2) on top and garnish with lettuce and olives, if on hand.

Garlic - mincing
Remove the skin of the garlic clove, and cut vertically in half. Then remove the core, slice thinly cut-side down without cutting as far as the base part, and lay the knife flat and insert horizontal cuts. Finally, mince from end to end.
