Remove the seed from the dried plum and finely mash and add (A). Soak the marlin for 10 min. (flip over after 5). Cut the spring onion into 4 cm (1.5 in) lengths. Finely chop the perilla.

Lightly cover the marlin pieces in starch.

Heat cooking oil in a pan and fry the marlin. Once it is well cooked, add in the marinade. Arrange on a plate and dress with perilla.

Clean the fry pan, heat a small amount of cooking oil and fry the spring onion. Season with soy sauce, remove and garnish the marlin.
