Fried Marlin in Plum Marinade

  1. Remove the seed from the dried plum and finely mash and add (A). Soak the marlin for 10 min. (flip over after 5). Cut the spring onion into 4 cm (1.5 in) lengths. Finely chop the perilla.
  2. Lightly cover the marlin pieces in starch.
  3. Heat cooking oil in a pan and fry the marlin. Once it is well cooked, add in the marinade. Arrange on a plate and dress with perilla.
  4. Clean the fry pan, heat a small amount of cooking oil and fry the spring onion. Season with soy sauce, remove and garnish the marlin.
