Remove stems from the shiitake mushroom and then finely chop up the mushrooms and lotus root.

Remove crusts from the sandwich bread and cut the remaining bread into approximately 5 mm (0.2 in.) cubes.

Mince the shrimp and scallops into a paste using either a kitchen knife or a food processor.

Mix the egg white and (A) seasonings into (3), then add and mix in (1).

Slightly dampen your hands, divide the paste into eight equal portions, shape each into a ball then press on (2).

Heat the frying oil over medium, then fry each ball for about 3 minutes until golden brown and crispy all over.

Arrange the seafood balls on a plate, serve with cilantro leaves and a side of chili sauce if desired.

Shiitake mushrooms - removing the hard base

The hard base, called "ishizuki" in Japanese, is the blackish tip at the end of the stem. Use a knife to cut or scrape off this portion.
