Directions

  1. Boil the penne pasta in salt-added (roughly 10 g salt per 1 L/33.8 fl. oz. of water) water, keeping slightly firm (al dente), then drain.
  2. Cut the the bacon up into 1 cm (0.4 in.) sticks.
  3. Crush the garlic then mince. Remove seeds from the red chili pepper.
  4. Heat the olive oil and (3) in a fry pan and once fragrant add in and saute (2).
  5. Add in the white wine and diced tomatoes, simmer for 7 to 8 minutes over medium heat, then add in the soy sauce.
  6. Add (1) to (5), combine well then adjust the flavor with salt.
  7. Serve into bowls and sprinkle on the powdered cheese. Garnish with fresh basil if on hand.

Garlic - mincing

Remove the skin of the garlic clove, and cut vertically in half. Then remove the core, slice thinly cut-side down without cutting as far as the base part, and lay the knife flat and insert horizontal cuts. Finally, mince from end to end.
