Directions

  1. Boil the pasta in salt-added water for the time indicated on the package. Cut the bacon slices into half lengthwise, then cut into 2 cm (0.8 in.) widths. Thinly slice up the onion into 2 cm (0.8 in.) cubes, cut the carrot into thin quarter slices, and chop the potato and zucchini into 2 cm (0.8 in.) cubes. Place the potato in water.
  2. Heat the olive oil in a pot, cook the bacon. Next add in the vegetables from (1) and saute until the onions become translucent.
  3. Add 600 ml (20.2 fl. oz.) of water and the bouillon granules to the pot (2), next add in the canned diced tomatoes and remove any scum that forms. Cover with a lid and simmer for 15 minutes. Check the flavor, adjust with soy sauce and pepper if necessary and then add in the pasta.
  4. Ladle the soup into bowls and sprinkle powdered cheese on top.
