Chop each asparagus spear into 3 equal lengths, then quickly boil.

Spread out each beef slice and sprinkle on the salt and pepper. Wrap one piece each around three asparagus portions. Repeat the process with each asparagus piece to prepare 12 rolls in total. Lightly dust the rolls with flour.

Heat 1 Tbsp of the olive oil, brown both sides of the beef rolls (2).

In a separate pot, heat the remaining 1 Tbsp of olive oil, and saute the garlic first, and then the onion. Add in (A) and (3), then simmer for about 15 minutes. When required, season with salt and pepper to taste. Serve onto plates and garnish with chervil if on hand.
