Directions

  1. Cut the bacon into 5 mm (0.2 in.) widths. Finely chop up the green onion.
  2. Heat the olive oil in a fry pan, quickly cook the bacon (1), blot away excess grease with paper towel.
  3. Add (2) to the rice, sprinkle on the green onions, katsuobushi, and soy sauce. Combine all together, then divide into two equal portions.
  4. Spread out some wax paper (or plastic wrap) and lay down 1 sheet of nori seaweed on top. Place half of (3) on top in a square shape and fold the nori seaweed around the rice. Wrap the onigiri in the wax paper. Flip over from time to time to allow thorough cooling.
  5. Repeat the same process with the remaining ingredients and then cut in half to serve.
