Steam the unpeeled sweet potato until easily pierced with a skewer or fork, then peel and mash while still warm. Microwaving the sweet potato in a lidded heat resistant container is also an option.

Cut the bacon into small pieces.

Heat 1/2 Tbsp of olive oil in a pan, then saute (2) and the onion together. Allow to cool, then add to (1), and also add in the soy sauce and parsley. Combine well and then form the mixture into small, bite-size balls.

Cover (3) with the batter (A).

Oil a baking pan with olive oil (extra) and arrange (4) on the pan. Pour the remaining olive oil uniformly all over the pan, then bake in an oven preheated to 200°C (392°F) until golden brown.

Serve on plates topped with a dab of ketchup each.

Onions - finely chopped
Cut the onion with its outer skin removed vertically in half, and thinly slice cut-side down without cutting as far as the base. Then lay the knife flat and insert horizontal cuts, finely chopping from end to end.
