Without peeling, slice the sweet potato diagonally and thinly into 5 mm (0.2 in.) thick slices, then into 5 mm (0.2 in.) wide sticks (slightly larger than matchstick size) and place into water.

Melt 2 tsp of butter in a fry pan, drain the sweet potatoes well and add in to saute.

Move the sweet potato sticks around until coated entirely in butter. Once cooked, add in order the sugar and then soy sauce and spread throughout until the sweet potatoes are well seasoned.

Add in the remaining 2 tsp of butter, sprinkle on and stick the black sesame seeds to the fries.

Sweet potatoes - removing starch
To remove excess starch, place cut sweet potatoes into cold water making sure the cut surfaces are submerged. This step is especially recommended for "kinton" (Japanese-style mashed sweet potato) and other lightly seasoned dishes where a delectable color is desired. Soaking time of about 5 minutes is sufficient.
