Cut the sweet potato into 1 cm (1/2 in.) thick circles and rinse.

Cut the pork into large bite-size pieces.

Heat up the sesame oil in a pan and cook (A). When aromatic, add and saute (2).

When the pork begins to change color, dry off (1), then add and cook.

Add (B), and when it begins to boil, lower the heat, cover and leave until the sweet potatoes are soft.

Arrange on a plate, and dress with the coriander.
Cooking Basics
To remove excess starch, place cut sweet potatoes into cold water making sure the cut surfaces are submerged. This step is especially recommended for "kinton" (Japanese-style mashed sweet potato) and other lightly seasoned dishes where a delectable color is desired. Soaking time of about 5 minutes is sufficient.
Remove the skin of the garlic clove, and cut vertically in half. Then remove the core, slice thinly cut-side down without cutting as far as the base part, and lay the knife flat and insert horizontal cuts. Finally, mince from end to end.
Remove the roots of the Japanese long onion, and insert vertical cuts. Then chop up finely at right angles from end to end.
