*An otoshi-buta is a wooden cover that fits inside a pot and holds ingredients under a liquid while simmering. A plate or aluminum foil can be used.
Directions

Cut sweet potato into 1 cm (1/2 in.)-thick slices, soak in water for a moment, then drain.

Cook sweet potatoes in water with a little salt until a fork passes through. Drain in a strainer.

Peel orange and separate into slices.

Cook sweet potatoes, oranges and (A) in a pot under an otoshi-buta* for 5-6 min. Serve.

Sweet potatoes - removing starch

To remove excess starch, place cut sweet potatoes into cold water making sure the cut surfaces are submerged. This step is especially recommended for "kinton" (Japanese-style mashed sweet potato) and other lightly seasoned dishes where a delectable color is desired. Soaking time of about 5 minutes is sufficient.
