Use a fork to poke small holes into the chicken thigh in several places.

Mix together (A) into a plastic bag or sealable container. Place (1) inside and massage the mixture into the chicken. Set aside for 10 minutes.

Place the chicken skin-side down on a grill and cook for 6 to 7 minutes. Turn over and cook for a further 6 to 7 minutes. (If using a double-sided grill, opt for 10 to 11 minutes skin-side up.) Cover with aluminum foil if the chicken seems as though it may burn.

Cut the chicken into bite-size pieces before serving. Garnish with a halved sudachi citrus for squeezing over the chicken, if desired
