100 g (3-1/2 oz.)

Directions

  1. Peel the potato, then cut it into sticks and soak in water.
  2. Cut the pork into slightly thicker pieces than the potatoes, and season with the marinade (A).
  3. Mince the ginger root, and cut the green onions into very small pieces.
  4. Dry off the potatoes (1), and parboil them in boiling water.  Place them in a colander.
  5. Heat up the cooking oil in a pan and saute the ginger root.  Once fragrant, add and saute the pork until the color changes.  Add (4) and season with (B), then saute together to allow the flavors to seep into the food.
  6. Serve sprinkled with the green onions.

Cooking Basics

Potatoes - matchstick juliennes

Remove any eyes from the peeled potato, place in water, and cut into rounds of around 3 mm (0.1 in.) width, gradually sliding and stacking the slices. Then thinly cut to widths of around 3 mm (0.1 in.).


Ginger - mincing

Remove the skin of the ginger and thinly slice, gradually sliding and stacking the slices. Then mince the ginger into fine pieces, and slice again finely at right angles.
