Gnocchi with Tomato Sauce

  1. Peel the potatoes, divide into 4 equal pieces. Boil in plenty of water. Once softened, drain the water, continue to heat and steam off excess moisture until the potato edges become whitened, then mash until smooth.
  2. Transfer (1) to a bowl, add and mix in (A), then form the mixture into a log. Cut this into 3 cm (1.2 in.) widths and lightly imprint each with the back of a fork.
  3. Fill a pot with water, add in some salt and turn on the heat. Drop (2) one at a time into the water. Once each gnocchi floats to the surface, remove excess moisture and serve onto plates.
  4. Warm the tomato sauce, pour onto (3), then sprinkle on the parmesan cheese.
