Directions
- Peel the potatoes, divide into 4 equal pieces. Boil in plenty of water. Once softened, drain the water, continue to heat and steam off excess moisture until the potato edges become whitened, then mash until smooth.
- Transfer (1) to a bowl, add and mix in (A), then form the mixture into a log. Cut this into 3 cm (1.2 in.) widths and lightly imprint each with the back of a fork.
- Fill a pot with water, add in some salt and turn on the heat. Drop (2) one at a time into the water. Once each gnocchi floats to the surface, remove excess moisture and serve onto plates.
- Warm the tomato sauce, pour onto (3), then sprinkle on the parmesan cheese.
