Divide the Spanish mackerel into 2 pieces, then place in a bag with (A) for 30 minutes in the refrigerator.

Drain the liquid, then cook both sides of the fish over medium heat. Sprinkle with sesame when finished.

Remove the seeds from the pickled apricots (umeboshi) (B) and smash the pulp. Thinly slice the turnips and massage with salt. When tender, dry off and garnish with the smashed apricot.
