dashi / bonito broth

100 ml (3.4 fl. oz.)

sake (cooking sake)

2 tsp

grated ginger

1/2 knob

(A) Mixed Potato Starch with Water

Directions

  1. Drain the tofu, place into a lidded heat-safe container and heat in a microwave (600W) for 3 minutes. 
  2. Place the bonito broth, soy sauce and sake into a pot, mix well then bring to a boil. Once boiling add in (A) to thicken, then allow to come to a quick simmer.
  3. Serve (1) into bowls, pour on (2) and top with a dab of the grated ginger.
