Directions

  1. Cut the sinew from the chicken. Poke a few holes so that the flavoring will easily soak in. Rub in salt and sugar by hand, place in a heat-safe container.
  2. Finely chop up the green onion and the ginger, sprinkle on (1). Pour on the soy sauce and Shaoxing wine, place in a lidded heat-safe container and microwave for 6-8 minutes.
  3. Remove the lid, allow to cool, cut into bite-size pieces and arrange on a plate. Sprinkle on the finely diced up green onion, spoon on the broth and serve.

Chicken thigh meat - removing sinew

Thigh meat sinew is tough and should be removed beforehand. Make a shallow 1 to 2 cm (0.4 to 0.8 in.) wide cut at a right angle into the sinew. Remove the sinew first when preparing bite-sized pieces.
