Cut the pork thigh into 1 cm (1/2 in.) wide and 5-6 cm (2 in.) long rectangles. Season with (A).

Beat the egg white from (B) until bubbles emerge, then mix in the other (B) ingredients.

Cover the pork with starch and then batter. Fry in oil over medium heat. Serve with ketchup and Sichuan peppers, to be added as desired.
