Tempura refers to seafood and vegetables lightly fried. Here we have a Chinese twist on a Japanese favorite using pork, and adding ketchup and Sichuan peppers to spice things up.

(B)Batter

Directions

  1. Cut the pork thigh into 1 cm (1/2 in.) wide and 5-6 cm (2 in.) long rectangles. Season with (A).
  2. Beat the egg white from (B) until bubbles emerge, then mix in the other (B) ingredients.
  3. Cover the pork with starch and then batter. Fry in oil over medium heat. Serve with ketchup and Sichuan peppers, to be added as desired.
