Cut the mackerel into 1 cm (1/2 in.) pieces. Apply (A), then cover in starch and fry in oil at 180 C (355 F).

Heat oil in a pan, chop the chives, then fry in the pan. Add the mackerel, then (B) and stir-fry together.

Cook the bok choy separately in oil and salt, then place on a dish. Drain the liquid and place on a plate. Add (2) and garnish with cilantro.
