Directions

  1. Rinse and dry the mackerel, slice thin openings in the meat, run over with hot water in a strainer.
  2. Thinly slice the ginger, cut the long onion into 3 cm (1.2 in) pieces.
  3. Mix (A) in a fry pan and heat. Once it begins to boil, add (1),(2) and red peppers. Cover the pan well in aluminum foil, boil 7-8 min. over medium heat while occasionally stirring the broth. After dissolving miso in the broth, continue to boil for another 7-8 min.

Peel the skin of the ginger knob, and then thinly slice it from end to end.


Japanese long onion - cutting into chunks

Cut up from one end into about 3 cm (1.2 in.) lengths.
