  1. Shave 1/3 of the cucumber starting from the head into little pieces. Diagonally slice the remaining, and lightly sprinkle with salt.
  2. Quickly douse the sardines in boiling water, then dry.
  3. When the thinly sliced cucumbers become pliable, rinse with water, dry, and mix with sardines.
  4. Carefully dry the shaved cucumber, mix with light soy sauce and rice vinegar. Dress (3), place on a small plate, and adorn with ginger slices.
