Avocado and Tofu Salad

Tomato, avocado and tofu are a perfect match for a healthy salad.

  1. Cut the avocado into 2 cm (3/4 in) cubes. Cut the cucumber into 1.5 cm (1/2 in) cubes.
  2. Divide the tofu into 4 equal pieces. Dry between paper towels.
  3. Thinly slice the onion and soak in water.
  4. Arrange the tofu on a plate. Dress the avocado with some mayonnaise and arrange with the tofu. Remove the onions, dry and place on top of tofu and avocado. Dress with ponzu and enjoy.

Avocado - peeling

Cut the avocado lengthwise with a knife until contact is made with the pit. Without removing the knife, make a continuous slice around the pit until the knife meets the initial incision point. Twist the two halves to separate. Strike the pit with the base part of the knife blade strong enough so that it becomes embedded and remove the pit. Use your hands to gently peel away the skin.

Avocado - prevent browning

Cut into bite-sized pieces and sprinkle on lemon juice to prevent the avocado from turning brown.
