Place the onion into a heat-safe container, add in 1/2 of the oil and spread throughout. Lightly cover with plastic wrap (or a lid) and heat in a microwave (600W) for about 3 minutes. Moisten the panko breadcrumbs with the milk.

Once the onions have cooled, add in the ground meat, 1/2 Tbsp of soy sauce, the beaten egg and mix well. Divide the mixture into two equal portions and form each into an oval patty.

Heat 1/2 Tbsp of oil in a fry pan, place the hamburgers (2) inside, cook on both sides, then cover with a lid and cook through over low heat.

Pour in (A), coat the hamburgers entirely, and once the surfaces become glossy, turn the heat to low. Place the cheese on top of the hamburgers and then cover with a lid to melt the cheese.

Arrange (4) on plates and pour on any sauce remaining in the fry pan. Garnish with the baby leaves and cherry tomatoes.

Cut the onion with its outer skin removed vertically in half, and thinly slice cut-side down without cutting as far as the base. Then lay the knife flat and insert horizontal cuts, finely chopping from end to end.
