Prepare the cutlet sauce. Finely chop the onion, fry in oil and set aside to dry. Place the minced beef in a bowl, add the onion and ingredients from (A) and mix well.

Divide the mixture into 8 equal pieces. Toss back and forth from hand to hand a few times to remove any excess air, then flatten into thin ovals.

Mix (B) forming the egg batter. Dip and evenly cover (2) in flour. Lightly dust excessive amounts. While holding in your left hand, dip and evenly cover in egg batter. Place each piece on top of bread crumbs, then cover the top of each piece and lightly compress with your right hand.

Fry each piece in slightly hot oil until both sides are crispy.
