Directions

  1. Divide the tofu into 4, diagonally slice the long onion into 1 cm (0.4 in.) width pieces.
  2. Place (A) into a pot over medium heat, once boiling add in the beef and tofu and allow to simmer. Once half of the cooking liquids have boiled down add in the long onion and simmer until cooked through.
  3. Serve into bowls and top with a soft-boiled egg.

Remove the roots of the Japanese long onion. Then thinly slice up diagonally from end to end.
