Place the steak aside at room temperature. Right before sauteing, season both sides of the beef by sprinkling with salt and pepper.

Heat the olive oil in a fry pan, saute what will be the top surface of (1) for 30 seconds over high heat, then turn the heat to low.

Turn (2) over and use paper towel to wipe away excess oil. Cover with a lid and cook for 1 minute (for medium rare) then serve onto plates.

Saute the onion and garlic over medium-low heat for about 2 to 3 minutes, add in (A), boil down some, then pour onto (3). Garnish with the watercress.
