Directions

  1. Salt and pepper both sides of the pork.
  2. Cut the onion into 1 cm (about 1/2 in.) thick rounds.
  3. Heat the olive oil in a frying pan, then place (2) and lightly floured (1) in the pan.
    If using rosemary, place near the pork, and cover with a lid.
    Cook for 2 to 3 minutes over medium heat.
  4. Turn over the pork and onions, and cook through for 3 minutes over medium-low heat uncovered.
    Remove the onions and remove any excess oil from the pan.
    Add (A) and lightly saute the pork, then add (B) and coat.
  5. Loosen the onions and serve together with the pork cut into easy-to-eat pieces.
    Garnish with rosemary and cover with remaining sauce in the pan.
