150 g (5-1/4 oz.)

(A) Beef Seasoning

Directions

  1. Cut the beef into thin slices 4 cm (1-1/2 in.) long, then season with (A).
  2. Cut the Japanese long onion into 4 cm (1-1/2 in.) long pieces.
  3. Mince the garlic.
  4. Make the stir-fry seasoning by mixing (B) together.
  5. Oil a wok with sesame oil, then stir-fry the garlic until fragrant and add the beef. When the beef changes color, add the onions and quickly stir-fry together. Pour in the seasoning (4), and stir-fry over high heat. Add the starch dissolved in water to thicken the sauce in the wok to finish.

Cooking Basics

Garlic - mincing

Remove the skin of the garlic clove, and cut vertically in half. Then remove the core, slice thinly cut-side down without cutting as far as the base part, and lay the knife flat and insert horizontal cuts. Finally, mince from end to end.


Japanese long onion - cutting into chunks

Cut up from one end into about 3 cm (1.2 in.) lengths.
