Directions

  1. Peel the grapefruit, break into segments, and also peel away the thin skin. Julienne the cabbage. De-string the snap peas and boil in water, then cut in half crosswise. Halve the cherry tomatoes.
  2. Mix together (A) to prepare the dressing.
  3. Arrange the grapefruit and vegetables (1) in bowls, then drizzle on the dressing (2) before serving.

Separate the leaves and remove the core. Cut the leaves in half lengthwise to make it easier to julienne, then stack, roll up, and slice very thinly from end to end.
