Peel the grapefruit, break into separate wedges, and also peel away the thin skin. Julienne the cabbage. De-string the snap peas and boil these, then cut in half. Halve the cherry tomatoes.

Mix together (A) to make the dressing.

Serve the grapefruits and vegetables in a bowl topped with the dressing from (2).

Separate the leaves and remove the core. Cut the leaves in half lengthwise to make it easier to julienne, then stack, roll up, and slice very thinly from end to end.
