Sprinkle the yam cake with a dash of salt (not included in ingredients), pound with a rolling pin and then quickly rinse.

Slice a crisscross pattern into both sides, cut into 2 cm (0.8 in.) cubes then cook from cold water to remove bitterness.

Place the sesame oil into a small pot and saute (2) well. Once the surfaces are browned, add in the red chili pepper, soy sauce and mirin and coat each cube with the seasonings.

Rub yam cake with salt to remove its distinct odor. Use about 1 Tbsp of salt for 1 large yam cake. Rinse quickly and wipe dry before using.
