Peel the daikon radish and cut into 8 mm (0.3 in.) width and 8 cm (3 in.) length sticks, place into a tray and then season with (A) and set aside to soak up flavor for 10 minutes.

Cover (1) with the flour, combine together and set aside for 5 minutes.

Spread out some potato starch in a separate tray and coat each stick from (2).

Pour about 2 cm (0.8 in.) of oil into a 26 cm (10.2 in.) fry pan and turn the heat to medium. Once the temperature reaches 170 to 180℃ (338 to 356°F) add in (3) one at a time, and deep-fry for about 5 minutes while rolling each stick. Turn the heat to high and once the coating is crunchy, remove from the oil allowing any excess to drip off and serve onto plates.

Sprinkle on the black pepper while hot and enjoy with a side of ketchup.
