Simmered Beef and Tofu

1 block (300 g / 10.6 oz.)

150 g (5.3 oz.)

Directions

  1. Slice the tofu into half, wrap in paper towel to soak up excess moisture.
  2. Cut the beef into easy-to-eat lengths. Chop the green onion up diagonally into thin rounds, place into water, gently massage then drain.
  3. Place (A) into a pot and turn on the heat. Once boiling add in the beef while separating apart. Once boiling again remove any scum that forms, then add in (1) after removing from the paper towel. Cover with a lid and simmer over low to medium heat for about 15 minutes.
  4. Serve (3) into bowls, top with the green onions and sprinkle on seven-spice chili pepper if desired.

Tofu - draining

Wrap tofu in paper towel and set aside for 15 to 20 minutes. This method works best if the tofu is cut into the desired sized pieces beforehand to remove excess moisture.  
Or wrap tofu in paper towel, place on a tray or other suitable surface and place a weight of 500~1000 g (17.7~35.3 oz.) on top and set aside for about appropriate minutes to release as much moisture as possible.
