Directions

  1. Shell the peas, place into a bowl, sprinkle on a small amount of salt (extra) and mix throughout. Quickly rinse and drain.
  2. Mix (A) together in a pot and bring to a boil to prepare the simmering sauce. Add the peas (1), cover with a drop lid* and turn the heat to medium. Once boiling again, remove any scum that forms, adjust the heat to a rolling boil and simmer until the peas are softened.
    • A drop lid is a lid that floats on top of the liquid in pots and pans while simmering foods. It allows heat to be evenly distributed so ingredients cook evenly and quickly. You can purchase one, or make a substitute out of aluminum foil.
  3. Pour (2) with the simmering sauce into a stainless steel bowl. Place an ice bath under the bowl to quickly cool. Cover with a lid made from parchment paper to keep the peas from being exposed to air while allowing the flavor to soak in.
  4. Serve into bowls and garnish with a dab of the grated ginger.
