Ingredients(Servings: 2)

Ingredients(Servings: 2)

thinly sliced pork

250 g (8.8 oz.)

flour

2 tsp

vegetable oil

2 tsp

cut lettuce

2 leaves

(A) Mixed Seasonings

ginger

2 knobs

grated garlic

1/2 clove

mirin

2 Tbsp

Directions

  1. Use a spoon to scrape off the ginger peel, julienne 1 knob and grate the other knob. Mix (A) together in a bowl.
  2. Use paper towel to pat the pork dry, then spread out inside a cooking tray and lightly cover with the flour.
  3. Heat the oil in a fry pan over medium heat, add in (2) with the flour-covered side down, spread out and cook in place for 2 to 3 minutes. If the pork slices are placed without too much space in between and slightly piled at the edges, steam pockets will form and the meat will cook to tender and juicy. Once browned, flip each slice.
  4. Make space in the middle of the fry pan, add in the seasonings (A), and slightly turn up the heat. Once the seasonings come to a boil, spread over the meat while stir-frying.
  5. Continue turning over the meat to thoroughly coat with seasonings for 1 to 2 minutes, until these are boiled down and the bottom of the fry pan can be seen. Serve onto plates and garnish with the lettuce.

Cooking Basics

Ginger - julienned

Peel the skin of the ginger, and cut thinly, gradually sliding and stacking the slices. Then thinly slice from end to end.
