thin-sliced pork loin

4 slices (80 g / 2.8 oz.)

quick-boil kombu

50 g (1.8 oz.)

(A)

1 & 1/2 Tbsp

sake (cooking sake)

1 & 1/2 Tbsp

Directions

  1. Rehydrate the kombu in 400 ml (13.5 fl. oz.) of water.
  2. Cut the carrots into sticks having the same width as the kombu.
  3. Place the pork slices and (2) onto (1), roll from the edge and gently tie-up with cotton string.
  4. Place (3) into a pot, pour in (A) and bring to a boil. Once boiling, turn the heat to low and simmer for 15 to 20 minutes until the kombu is softened. Remove the cotton string and cut into easy to eat slices before eating.

Ingredients (for 880 ml / 27 fl. oz. of dashi)

Kombu/kelp
15 - 20 g (0.5 - 0.7 oz.)
Water
1000 ml (33.8 fl. oz.)

Directions

Soak the kombu in water and let sit for 30 minutes, then heat over medium heat.  When the water comes to a boil, lower the heat and allow to simmer for 7 to 8 minutes.
