ground pork

150 g (5.3 oz.)

vegetable oil

2 tsp

strong (bread) flour (for dusting)

as needed

(A) Dough ingredients

light (cake) flour

200 g (7.1 oz.)

baking powder

2 tsp

salt 

1/4 tsp

sugar

3 Tbsp

water

100 ml (3.4 fl. oz.)

(B) Meat filling seasonings

oyster sauce

1 tsp

black pepper (coarsely ground)

a dash

Directions

  1. First place the flour, baking powder and seasonings from (A) into a bowl, use cooking chopsticks to quickly combine these together, then add in the water and mix further.
  2. Once the dough starts to form a mass, knead by hand for about 2 minutes. Form into a ball, add in the oil and knead for a further 2 minutes until the oil is spread throughout and the dough has a uniform smoothness. Form into a ball, cover with plastic wrap, or a clean towel, and allow to rest for about 15 minutes at room temperature.
  3. Place the ground pork, green onions and (B) into a separate bowl, thoroughly combine these together by hand. Divide into 6 portions and form each into a ball.
  4. Divide the dough (2) into 6 portions and form each into a ball. Dust a cutting board or cooking tray with the strong flour, use a rolling pin to prepare 8 cm (3 in.) diameter circles.
  5. Place the meat filling (3) into the center of each dough circle, pull the circle edges up around the meat filling so that they come together to form a peak at the very top. Give the peak a small twist to close. Repeat this process for all 6 buns.
  6. Lay a kitchen towel inside of a 26 cm (10.2 in.) diameter fry pan, then place a 22 cm (8.7 in.) or so heat-resistant plate on top. Cover the plate with parchment paper and arrange (5) on top, keeping some space between buns. Pour hot water between the fry pan and the plate to a depth of about 1 cm (0.4 in.).
  7. Cover with a lid and turn the heat to high. Once boiling and producing steam, turn the heat to low and steam the buns for about 15 minutes.
