Ingredients(Servings: 2)
- lean tuna fillet

150 g (5.3 oz.)
- negi/Japanese long onion

1 stalk
- dashi/bonito broth

300 ml (10.1 fl. oz.)
- Kikkoman Soy Sauce

Directions
- Cut the tuna up into 7 to 8 mm (about 0.3 in.) thick slices, and the negi into 3 to 4 cm (about 1.5 in.) lengths.
- Place the bonito broth, soy sauce and mirin into a pot over high heat.
- Once boiling add in (1) and remove any scum that forms on the surface. Simmer over medium heat for 5 to 6 minutes, then serve into dishes with the broth.

This method is convenient for preparing small amounts of dashi, such as soup for one person, ohitashi (boiled vegetables seasoned with dashi and soy sauce), sesame dressing, etc. Place dried bonito flakes (about 5 g /0.2 oz.) into a tea strainer and pour in 200 ml (6.8 fl. oz.) of hot water.
