Directions

  1. Place the parsley, green onions and chives in a bowl, lightly top with salt and set aside for 10 minutes. Using a towel, wipe off any liquid.
  2. Heat oil in a frying pan, then add the onions and garlic and cook thoroughly. Add the meat and stir well until mixed with the onions and garlic. Mix in the celery, ginger, pepper and soy sauce. Add (1) and cook over low heat to avoid the vegetables from giving off liquid. Remove and spread out on a flat surface such as a tray to quickly cool.
  3. Cut the spring roll wrappers diagonally in half to make triangles. Mix together (A) to form a paste.
  4. Fold the triangles at the middle of the diagonal to form a cone shape. Add 2-3 tsp of (2) to the created pouch and tightly pack. Seal edges of each pouch with paste. Repeat until all pouches are filled.
  5. Fry pouches in oil at 170 C (340 F) until golden brown.

Onions - finely chopped

Cut the onion with its outer skin removed vertically in half, and thinly slice cut-side down without cutting as far as the base. Then lay the knife flat and insert horizontal cuts, finely chopping from end to end.
