Directions

  1. Cut the pork meat into 7 ~ 8 cm (3 in.) lengths, cut the green peppers in half, remove stems and seeds and roughly chop up. Remove the hard base from the shimeji mushrooms and separate into small bunches, chop the garlic up into 5 mm (0.2 in.) squares.
  2. Place the garlic into a fry pan over medium heat, spread out the pork slices, place the shimeji mushrooms and green peppers on top of the pork and cook for 2 ~ 3 minutes. Once the pork has browned, flip the slices over and saute for 1 ~ 2 minutes.
  3. Make space in the middle of the fry pan, add in the soy sauce. Once simmering, spread throughout all ingredients, then turn the heat to high and saute for about 1 minute to deepen the flavor.

Cooking Basics

Green peppers - removing seeds

Cut the pepper in half, fold the stem and then remove the seeds with your fingers. This is an easier and less wasteful method than using a knife.

Shimeji mushrooms - cutting off the hard base

Many of the shimeji mushrooms available in stores have been cultivated in mushroom beds, causing the roots to be tighly squeezed together. To some the chaff is attached, so be sure to cut away this hard base before using.
