White turnip – Removing greens & peeling

Wash the white turnip. Remove the greens by cutting at the stem base and trim any fine roots if still attached. Peel the turnip as you would an apple, rotating horizontally while cutting away the skin in one continuous strip.

This method leaves a bit of stem for color. Trim the greens, leaving about 3 cm (1.2 in.) of stem attached. Place the turnip in a bowl of water with the stem end facing downward and swirl gently to wash. Spread the overlapping stem sections, scrape out any dirt with a skewer or toothpick, then rinse thoroughly. Peel from the root end toward the stem in vertical strips. Stop the knife at the stem base and lift to cleanly remove the peel right up to the stem.
